- 2.5 cups Quick Cook Oats divided
- 2 cups All Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 4 oz Milk Chocolate Bar graded
- 1 cup Butter softened
- 1 cup Brown Sugar
- 1 cup Sugar
- 2 Eggs
- 1 tsp Vanilla
- 12 oz Semi-Sweet Chocolate Chips
Preheat the oven to 375°F
Blend 1 ¼ cups of quick-cook oats into a flour-like consistency using a blender or food processor.
In a medium bowl, mix the blended oats, remaining 1 ¼ cup of quick-cook oats, all purpose flour, salt, baking soda, and baking powder.
In the blender or food processor, pulse the chocolate bar until it is a fine powder. The chocolate bar can also be grated on a cheese grater.
In a stand mixer, cream together the softened butter and both sugars.
Add the eggs, one at a time to the butter and sugar mixture. Add the vanilla.
Slowly add the flour mixture into the butter mixture. Mix until the wet and dry ingredients are combined. Scrape the bottom and sides of the bowl to ensure the dough is fully mixed.
Add the chocolate chips and blended chocolate bar.
Scoop the cookie dough into balls using a spring-loaded cookie scoop and place on a cookie sheet.
Bake for 8-10 minutes
Allow cookies to cool on a cookie rack.
