Pre-heat the oven to 400 F
Slice the zucchini into sticks. Start by cutting off both ends of the zucchini and cutting it in half lengthwise. Place the cut side of the zucchini down and cut the zucchini into 1/4 inch sticks. Cut the sticks into thirds.
In the first bowl, add 2 TBSP of whole wheat flour and the zucchini sticks.
In the second bowl, whisk the 2 eggs together.
In the third bowl, combine the remaining 1/4 cup & 2 TBSP of whole wheat flour, panko breadcrumbs, parmesan cheese, and spices.
Place all of the zucchini sticks in the first bowl and dust with whole wheat flour until all sides are coated.
Working in batches, dip the flour coated zucchini sticks into the eggs, making sure all sides are coated. Let the excess egg drip off of the zucchini sticks before adding the zucchini sticks into the third bowl.
Place the egg covered zucchini sticks in the breadcrumb mixture. Make sure all sides of the zucchini sticks are well coated.
Place the breaded zucchini sticks on the prepared baking pan. Repeat the dipping process until you have coated all your zucchini sticks.
Place the pans in the oven and bake for 20-25minutes, or until golden brown.
Serve with ranch or marinara sauce.
