This spicy sausage and kale soup is perfect for a cold winter day! The spice from the sausage is sure to warm you up and the vitamins from the veggies will help keep your immune system strong.
1/4tsp Red Pepper Flakesmore or less depending on taste

2lbsRusset Potatoes peeled and chopped, about 4 cups
6cupsNo-Salt Added Chicken Broth
1Bell Pepper chopped
1Zucchinichopped
8oz Mushrooms chopped
4cups Kale chopped
1/4cupParmesan Cheese optional
1/4cupParsley fresh, optional
Instructions
Chop the onion and garlic. Set aside.
Wash and peel the potatoes. Roughly chop the potatoes into about 1/2 inch cubes and set aside.
Once you have the onion, garlic and potatoes prepared, start browning and crumbling the sausage over medium heat for about 5 minutes, or until most of the pink is gone. If a lot of fat comes off of the sausage, drain off a majority of the fat.
Add in the chopped onion and garlic and cook for another 2 minutes.
Add the spices and mix until the sausage mixture is evenly coated.
Add the chicken broth and potatoes and bring the soup to a simmer. Cook for 20 minutes or until the potatoes are just starting to soften.
Reduce the heat to low and add the chopped mushrooms, zucchini and bell peppers. Cook for another 10 minutes.
Add the kale and cook for another 3 minutes or until the kale is wilted and tender.
Ladle into bowls and top with chopped parsley and parmesan cheese! Serve with some toasted bread.
